What you’ll need:
Short-grain rice
Dry white wine
Frozen green peas
Sun-dried tomatoes
Smoked hunting sausages
Butter
Hard cheese
Dried garlic
Salt
Vegetable oil
How to make it:
Cook the peas: Boil the peas in salted water for a few minutes. Remove the peas and set them aside, keeping the cooking water for later.
Fry the sausages: Heat a little vegetable oil in a pan and fry the sliced hunting sausages until lightly browned. Remove and set aside.
Start the risotto: In the same pan, add butter, raw rinsed rice, and chopped sun-dried tomatoes. Cook for a few minutes, stirring, until the rice is coated in butter and slightly translucent.
Add the wine: Pour in the white wine and cook, stirring, until it fully evaporates.
Cook the rice: Return the sausages to the pan, add dried garlic, and begin adding the reserved hot water little by little. Stir regularly and let the rice absorb the liquid before adding more.
Finish the dish: Once the rice is tender and creamy, add the cooked peas and grated hard cheese. Mix well until smooth and creamy.
Serve: Serve immediately while hot and enjoy this comforting risotto.
