Beef burgondy does heart good justice. My buddy made beef heart pastrami years ago and that made some special sandwiches.

Bolivia and Peru have a dish called Anticuchos, look it up, it is perfect for beef heart. Japanese use it for Yakuniku over hot coals. I also like to slice it thin for carpaccio.
It is a lean meat cut, so high heat to medium doneness is perfect.
Trim wise, cut out anything that is fat or looks like a vein/tube.

I usually soak it with onion and garlic overnight. Then I grill it whole, then slice it and seal it, sprinkling a solution of garlic, onion, salt and lemon juice.

Open it up and slice the veins out. Iโll try to make it easy. There are two main compartments in the heart. Find them from the top, slice on either side of the divider, lay it open, remove divider cutting parallel to the meat, clean veins out cutting parallel to the meat, flip it, trim fat off using that same technique. Done. Slice it up or cube it up for country fried heart bites. Shewww come on now. Save fat for tallow give the veins to the dog. Also, itโs awesome made into jerky.. seriously really good stuff.

Cube beef heart into like 1 inch cubes. Dump into bowl of salted iced water and squidge around to get any leftover blood or clots out of the tissue. Plop into a covered casserole with an equal amount of large chunk onions [I suppose pearled onions would work] a few whole garlic cloves, a suitable to taste amount of italian herbs, coarsely cracked black pepper, salt if you feel the need and add red wine to cover. Cover, bake low and slow – 250*f for 4 to 6 hours. Serve over potato dumplings, noodles, rice, whatever starch you like. Add a nice side salad and a piece of cheesecake for dessert.
One can do it with any creatures heart, you just need to make sure to get the blood out.
