
I’ve been making macarons in my tilt head kitchenaid for several years and had gotten my meringue timing dialed in (minute or so on lower speeds then 10 minutes at speed 6). I upgraded to a 7qt bowl lift kitchenaid a couple months ago and haven’t had a good batch since. It’s either under whipped or over whipped. Can anyone with a bowl lift mixer tell me the speed and time they use? Thanks!

No advice. I just downgraded from a 6 qt lift bowl to an Artisan. I couldn’t get stiff peaks unless I used the highest speed. At speed 6, I could not get anything more than soft peaks, even with the smaller 3-quart bowl. It was pretty discouraging
Have you tested/adjusted the attachment height? They’re not always perfectly aligned. I have a tilt head but when I first got mine, meringue took forever until I learned about the dime test
I had this same issue last year. Honestly, I just have to eyeball it now when to pick the speed up. It takes about twice as long at each stage. Usually will go from speed 3 to 6 to 9 to 10. Speed 3 until frothy, speed 6 until you can see trails from the mixture linger a bit, speed 9 until I get impatient and go to speed 10. When the sides of the bowl look like they’re forming tiny mini stiff peaks, that’s when I check it.
I’ve thought about going back to the tilt head but it still works for me so can’t justify it. Hope this helps a little bit!
