Shoyu Chuka Soba, the broth is simmered with sugarcane, apples, veggies, and shiitake base with a sweet soy sauce tare, with the aroma oil they extract from enoki mushrooms. The whole bowl is layering different profiles of natural sweetness.
Yuzu Shio Chuka Soba, same broth and aroma oil with a salt tare. Then some yuzu kosho on the side of the bowl so you can mix it in halfway through to completely change up the flavor profile.
The wontons in both bowls are crazy, they honestly hold their own against any meat wontons I’ve had at other ramen spots.
Not a vegetarian myself, but these are vegetarian ramen. What makes this shop so special is that the chef isn't just focused on making "vegetarian food"; they are focused on making great ramen. Vegetarian ingredients just happen to be the medium the chef chose to present these masterpieces.

that sounds (and looks) amazing, I love yuzu & I can see how complex the different citrus/fruit/mushroom/soy combos would come out.
