    Score the fat on the breast, salt and pepper GENEROUSLY. Start off with a cold stainless pan with fat side down then turn on medium high heat. Once the breast releases, turn it over to roast it in delicious duck fat. Sear all the sides to desired doneness !

    Did you go with a fruit-forward sauce or keep it simple with just the pan drippings? I’ve found duck pairs beautifully with a cherry reduction or even just some orange zest.
