This savory Mediterranean baked broccoli recipe offers the health benefits of broccoli as well as the health benefits of olive oil. Here are the healthful ingredients you need for this flavorful vegetable recipe: fresh broccoli, extra virgin olive oil, fresh lemon juice, garlic powder and oregano. The broccoli is tossed in the Mediterranean lemon mixture then baked in the oven until crisp-tender.
This tasty gluten-free broccoli recipe can be served as a vegetarian side dish with any of your favorite proteins for dinner. I served it with chicken and rice for a nutritious, delicious meal.

I prefer to use fresh lemon juice, but you can use bottled lemon juice in a pinch.
I used a 13×9-inch baking pan, but a smaller one could be used.
Store leftovers in an airtight container in the refrigerator.
Here’s how to make it:
In a large mixing bowl, combine olive oil, lemon juice, garlic powder and oregano. Whisk to combine.

Add broccoli to the mixing bowl and stir to coat the broccoli in the mixture.

Pour the broccoli into a baking pan or casserole dish (see Recipe Notes). Season with sea salt and black pepper, to taste, if desired.

Bake at 400 degrees F for about 25 minutes, stirring after 15 minutes, until broccoli is crisp-tender.

Serve with your favorite proteins and side dishes.
