-broth was weird. I think I used too much of either mirin or rice vinegar so I had to dump half out and dilute it

-tofu was a pale imitation of chashu, lowkey forgot to season it whatsoever

-noodles were good!

-butchered the egg

-onions

    It can’t rain all the time.

    We all start somewhere. My first bowl wasn’t that great either. It takes time and practice to get to a place where you are happy with your bowls. Ramen has a lot of factors to get right.

    Take detailed notes on what you did both right and wrong. Use that to make decision on what to do the same or different next time

    It took me two years before I was happy with my tonkotsu

    One, now you will appreciate even more how complex and intricate the flavors and broth are when you go to restaurants for ramen.

    I offer this constructively, but you seem to be stuck between ramen and soba conceptually, which is a large part of why the end result is unpalatable.

    Inari and green onions are soba staples, so I’d ditch those immediately, along with the mirin and vinegar (which aren’t generally used in either dish).

    Soba broth (mentsuyu) is dashi blended with soy sauce, while ramen uses dashi with a richer blend of pork fat, miso, etc.
