Gluten free white carb guy here – too much whole fibre at night causes me issues. This is about the best bread I can find, Schar Wholesome Vitality Loaf. Just wondering if it’s worth buying, or just junk disguised as health food?

For reference, here’s the white bread I normally buy. I realise both are processed, but it’s good to have the option.
I’m coeliac and this is the best I can find too. They also have a new one that I like called farmhouse seeded which doesn’t have bad ingredients apart from those thickeners. But being gluten free I think these are the best we can find. Otherwise you have to make your own which for me has been a nightmare. The seeded one has nice big size slices too but it’s very expensive.

If you’re in Canada, little northern bakehouse is GF and easy on the insides.

With starch and (white) rice flour as the top ingredients – this is a highly processed food, not MD compliant.
I would definitely not include it as a staple in the MD. (And the same for regular white bread; it would not fit as a foundation of MD, but something you might include once in a while in moderation as a treat).
Is promise bread out of the question? They’re brioche bread is fantastic and it’s the only bread I buy – coming from a non celiac that buys gf for my partner.

Sainsbury’s Free From White Sliced Bread
INGREDIENTS: Water, Tapioca Starch, Rice Flour, Rapeseed Oil, Maize Starch, Humectant: Glycerol;
Stabilisers: Hydroxypropyl Methyl Cellulose, Xanthan Gum; Psyllium Husk Powder, Sugar, Potato Flakes, Yeast, Bamboo Fibre, Vitamins and Minerals (Calcium, Niacin (B3), Iron, Thiamin (B1), Folic Acid), Salt, Sugar Beet Fibre, Fermented Rice.
