Mesquite at 250 then cranking to 350 for the finish is a solid approach for getting that smoke penetration without drying them out. Derek Wolf’s Cowboy Butter seasoning is no joke either, that garlic herb profile pairs well with the heavier mesquite smoke. I’ve been using cherry pellets lately and wondering if mesquite would be too strong for my taste. How crispy did the skin get at 350 for just 20 minutes?
