Not sure if anyone has used this charcoal yet (FOGO Eucalyptus) was labeled and “new” at my local store. It is fantastic. Huge chunks and great favour. First pic is my rig

    One thought on “huge chunks”. In my opinion chunks can be too big (and many of these in your pic would fall into that category for me. 

    Larger chunks like this can actually create cool spots and uneven heating. As an example, if that large log shaped piece  in your pic Was burning on the bottom but not the top, that entire area would be a cool spot. Carbon is such an amazing insulator that if it were burning underneath but not on top, you could Touch the top of that Piece with your hand and it would be ambient temp to the touch. Thats no bueno for evenly distributed heat. 

    I would actually smack some of these down with a hammer. You can also use your ash tool if they are properly Carbonized .

    I think anything bigger than like a tennis ball can be too big and lead to uneven temps. I prefer like golf ball to lime sized (at the biggest) for a very even heat pattern.  Anything larger than that, I break them down into smaller pieces. I don’t use briquettes but they are the perfect size (by design) for a perfectly distributed heat pattern. If I could get a bag of lump that was 100% briquette sized, I would buy all they had.

    Used a bag and loved its distinctive light smoky flavor along with big lumps! Sad I haven’t been able to find any up here now

    I love the eucalyptus charcoal for chicken. It adds the perfect flavour for me.
