What I would call just lasagna is rectangular. A meal that brings comfort and love. Bubbling, golden-brown crust of toasted parmesan lay heavy, molten layers of pasta, draped like silk over a rich heart of slow-simmered Bolognese. Each forkful pulled away a ribbon of creamy ricotta, white and velvet against the deep crimson of the vine-ripened tomatoes. But also in a rectangular shape. Baked in a dish that was my mother’s, and her mother’s before that.

My teenager would likely devour this dish made this exact way. They, weirdly[imo] dislike the regular lasagna noodle texture and the crunchy thing going on here seems up their alley.

ITT a lot of people who don’t know that lasagne, in Italian, refers to the pasta shape and not the dish commonly made with them, which is lasagne al forno. In Italy, lasagne are cooked in many different ways, including just in broth (lasagne in brodo).

When I was a kid and we were treated to the Olive Garden (it was an event, I’ll tell ya) I HATED their lasagna because I didn’t think it was made right. Turns out my mom always made hers with cottage cheese instead of ricotta-marscapone. In her defense, this was in the 80s (and Olive Garden was “good”) so your average local grocery chain wasn’t likely to carry fancy cheese like that.
