    What is the name of this thing? I dont doubt this is authentic, but I want to research the Italians who embrace this. Its almost like its a fried eggplant sandwich, but they forgot the eggplant.

    (Edit: nevermind, I see in the notes its panelle. Crazy Sicilians….)

    Whenever my mom makes breaded chicken she’ll make a couple small breading patties. They’re pretty good, never would’ve thought to make a sandwich with them though

    Panelle is a must try when in Sicily. Often served with a slice of lemon as well, but youre right that it doesn’t usually get a spread. Though I have to admit that some aioli and Calabrian chiles would improve it to my tastes. Buon appetito!

    I used to fry up the leftover batter after my mom was done making chicken parm. Looks a lot like this. It was delicious, but never made a sandwich out of it.

    My chef made basically this but deep fried them into French fries, you should try that too! Think he dipped them in muhamara but pesto or chimmichurri are probably great too
