    Humor aside, I’ve posted about this a few times but Italian espresso culture is so wildly different than the rest of the world riding the third and I guess upcoming fourth wave with all the fancy processing and roasting methods that most people in this hobby get shellshock from seeing how Italian baristas work.

    Never mind how old the beans get at some of these cafes. Half this sub would suffer from a heart attack. No idea what this guy is doing spraying the portafilter. This is a new one to me.

    I had the best shot of espresso in Naples. Had a lot more in Naples and Rome that varied drastically. Paris, on the other hand, was pretty bad. So, what this fella is making, I’m buying.

    First of all, I’m Italian, and I do not like seeing/having a coffee prepared like this, reason why I almost never get an espresso outside.
    This said, if you go translate espresso, it literally means express, fast, use the word you like the most; now, if every cafe like this would start making coffees like we do in this sub, which means measure the beans, grind on the spot, distribute, tamper and finally extract for 30+ seconds, it’s gonna take 3 minutes minimum compared to the 40 seconds in the video; you will agree with me that that isn’t an “espresso” anymore, like someone else wrote, here people usually get into the bar, ask for an espresso, drinks it, pays and leave, all in 2 minutes or less. If I have to wait more than 3 minutes only to get the coffee done, it doesn’t make anymore sense to get it at all, and this is a CULTURAL thing.
