Right off the bat I know I need thinner chicken & bigger bread. I also am going to opt for actual avocado instead of guacamole. Tomato was also a little too strong.

Other than that it was amazing. Brined chicken, oxoaca cheese, chipotle mayo, all hit perfectly.

Looks like a very worthy struggle of trying to fit it all in my mouth

Looks like you’re on the right path.

You should try using real plates at home since single use plates are wasteful and lazy

Heavily grilled onions, whip together actual chipotle salsa and sour cream for a salsa crema instead of mayo, and melt the cheese onto the bread with the onions underneath the cheese before compiling the torta

Editting to add refried beans if/when they’re available

Looks like it probably tasted delicious, but I’m confused about this perspective. Is it on its side?

Oaxacan cheese is a melting cheese, so if there’s a way you can take advantage of that, I would recommend it.

If you’re going for avocado I would
Recommend someting with acid added to the sandwich like pickled red onions or pickled jalapeños. If not it may be too much fat and salt.
