I hate to admit y'all right, but it was the grind. I maxed out my grinder and worked backwards, no channeling, 25-30 second extraction. Beautiful coffee. I can finally rest.

Spurts are not channeling, you can’t see channeling. The only thing you are watching when you grind finer is a liquid that has higher viscosity, therefore higher surface tension, therefore a more uniform column of liquid. Don’t look at how it extracts, just taste it and compare tastes. Learn to dial in by taste.
