This is a fun little “whip it together” recipe that I love for when I just want comfort food.
1 quart jar crushed tomatoes in their juice (do not drain) 2TB tomato paste (I buy mine because I don’t can paste!)
Into a blender. Low heat on stove.
Toss in a cubed frozen pesto from last year’s garden. If you’re out of pesto, a small glug of olive oil, 1tsp dried basil, and a two healthy pinches of garlic and Parmesan go a long way.
Once heated through, whisk in a glug of heavy cream and warm again – do not allow to boil.
