First time! Beef Strogenoff with green beans.

    Pretty excited to have discovered this subreddit! Had freezer beef which is how this weeks menu came about.

    I shoot for 16 servings of 500-650 calories, 40g>protein, <60g net carbs for my meal preps.

    2770g of heavily trimmed ribeye and chuck.
    680g of 4% fat cottage cheese. (1 24oz container)
    448g of rotini (1box)
    1700g of frozen green beans (5 bags)
    2 lbs of sliced mushrooms (cremini in this case)
    411g 1 can stewed tomatoes.
    2 large onions
    2 heads of garlic
    2 tbsp Worcestershire
    2 tbsp fish sauce
    2 tbsp brown mustard
    1/2 cup of red wine

    Cube beef. (salt/pepper/garlic to season)
    Broil beef in a braising/roasting pan for color.
    Add chopped onions and garlic.
    Broil some more for color on onions.
    Add Worcestershire, fish sauce, mustard, red wine, stewed tomatoes to beef. (on stove top and cook off wine if you are inclined)
    Add water/stock if needed to almost cover beef.
    Braise beef (covered tightly) at 300F till tender (2-3 hours)
    Air fry mushrooms coated with oil/salt/garlic powder for ~24 minutes at 425F stirring at least halfway through, or in batches, or however you want to do this.
    Cook green beans, microwave, steam, bake. To your liking.
    Boil rotini, al dente, rinse under cold water.

    Remove beef from braising liquid.
    Strain out solids from braising liquid.
    Skim off fat from remaining liquid if so inclined.
    Blend braising liquid and all solids with cottage cheese (not including the beef)

    Split all finished products into 16 containers.

    Macros roughly 618 calories, 46g protein, 58g net carbs, 22g fat.

    I turned this into a recipe as closely as I could. I season largely “as needed”
