I’m really hungry after work, so split a baguette, drained the olive oil from a tin of mackerel, whisked it with lemon juice and brushed that on the baguette, then spread guacamole on one half, chilli pesto on the other, added a little chilli sauce, smashed the fish on top, and baked. Then to finish, a little salt and extra oil. It looks divine (well, I think so).

    How does that mackerel compare to other supermarkets own brands? I have tried Aldi and Waitrose in EVOO and was really underwhelmed, but looking for a decent tin that isn’t as pricey as the Portuguese stuff.
