    Come on then meat-heads, hit me with the science here. 

    I’ve tried grilling these a couple of times and they were tough as old boots. Always ended up having to rescue them with 8hrs in red wine. 

    We had grilled rib meat in Northern Spain and it was some of the best beef I’ve ever tasted. 

    Where am I going wrong?

    Stab meat. drain juice & myoglobin. Tough olde shoe leather.
