I’ve tried grilling these a couple of times and they were tough as old boots. Always ended up having to rescue them with 8hrs in red wine.
We had grilled rib meat in Northern Spain and it was some of the best beef I’ve ever tasted.
Where am I going wrong?

Stab meat. drain juice & myoglobin. Tough olde shoe leather.

Ok, now that you added smoke by browning and got some flavor in them you must braise those to soften the tissue and loosen up them proteins or super slow and low them for hours. Kenji to the rescue for how to cook these:
