Why does my rose bread look so different than the video I followed?
I watched a tutorial on how to make rose pull apart bread, but mine looks kinda ugly and has brown spots. I Followed the recipe and instructions, so I’m not sure where I went wrong. Any ideas/general advice?

That first photo is truly awful, it looks like a pile of intestines.
While that might not be what you wanted now I’d absolutely make this again for Halloween!

Good news, you’ve just found your new Halloween specialty! Imo even the “good one” looks wrong, the roses are more well formed than yours yes but because the bread is red it just screams entrails. Retry it without the dye and even if you still have trouble forming the roses it’ll look 10x better
Also if you want better advice you should provide the recipe you followed, without knowing what you did there’s no way of telling you how to improve

Overproofed maybe? Honestly, even the original bread looks kinda odd. A floral bread would be lovely I think, but maybe not that shape and not dyed. I would try a different recipe.

Oh wonder if the maker of the recipe you followed didn’t actually have a second rise and rolled theirs a lot tighter or used a silicone mold and flipped it out after baking. Theirs looks awfully perfect in shape especially around the edges to not be a mold of some sort. It just doesn’t appear to be hand shaped and baked imo. They’ve used something besides the recipe steps they are claiming

sadly that’s just the curse of fancy baked goods. Shaping them for proofing is one thing but you need to expect how much it will rise after that. Every figure or shape will look bloated THEN rise more in the oven
For stuff like this they are often “cheating” by sacrifing the quality of the baked product, only focusing on the visuals. And of course a lot of practice, both for shaping and timing

I think when you’re shaping, if you flatten them a bit more before rolling and trim to get a straight edge— it will look a bit more crisp. Maybe you proofed a bit longer than they did. Did they use a mold?
You can lightly cover the top with foil to help slow the browning.
Alternatively, I think you could achieve defined shapes pretty easily if you make steamed bao buns.

Probably needed to roll things our thinner, and focus your lapping at the bottom 3rd of each layer.
But to be honest, as much ribbing as folks are giving you, you came closer to successful plaiting than I EVER have, and I kinda like it.

The colour is not your friend here. I think it would be very difficult for something this colour *not* to look like a medical situation, it’s just too much like the colour of internal organs.

It looks like the other started a little tighter maybe. Yours just rose (no pun LOL) more and got puffier. But they look like they will taste great! (Personally, I think it’s just the color because I don’t think the others look any more or less palatable than yours. They both look like body parts so …maybe avoid the color red?) For now? I would say add some butter, close your eyes and bite!)

I’ve made rose buns before. They were filled with chocolate pudding. They looked like prolapsed assholes but they were delicious. I would absolutely make them again.
