Roasted Shashito peppers, bacon, Oaxaca cheese and lime mayo on a crispy toasted bolilo roll.

Peppers were tossed in EVOO, salt + pepper and hit with the blast torch about 8 seconds while tossing (fun stuff!). And I've gone back to pan-frying bacon instead of oven baking for the last 20 years – more energy efficient, smells up the house better, easier to clean up after.

    I put the bacon on paper towels before baking and the clean up is way easier. The bacon isn’t swimming in grease, cooks more evenly and isn’t splattering all over.
