ive been prepping these rice bowls that are vegetarian and have a lot of fiber! they are super easy and cheap.

I cooked 1 cup of brown rice (i used brown basmati rice) according to package directions, but swapped water for veg broth and added a bunch of lime, chopped cilantro, and garlic. when it was almost done i added a can of rinsed black beans.

I chopped up a big sweet potato into small chunks and tossed them with olive oil, and seasoned with cumin, paprika, garlic salt, and chili powder. I air fried them for about 15 minutes, and then assemble them into containers for the fridge.

After heating I top them with a whole small avocado, a bit of salsa verde, some greek yogurt, and a bunch more lime.
