Personally I love a fatty steak but with all due respect to the steaks. A good sirloin sometimes just hits the spot.

I get it! I definitely prefer leaner cuts as well. I don’t mind a little bit of fat if it’s well rendered, but I’ve never been a big fan of eating big pieces of fat like what’s on a ribeye. Happy to cook up a nice ribeye for someone but personally I prefer filet, sirloin, flank, skirt and I recently tried a hanger steak which was incredible. I like a striploin but even then I tend to trim most of the fast away after I render it down so I can baste with what melts.

I love sirloins! Oddly enough neither kroger nor HEB ever seem to have top sirloin these days.
