Mushroom Barley Soup for a cold winter.
Ingredients:
3 tablespoons olive oil
1 large onion
4 garlic cloves
1/2 lb common mushrooms (White Button)
1/2 lb of exotic mushrooms (Shitake, Portobello, Oyster….)
10 cups mushroom stock
1/2 cup barley
2 carrots
2 tablespoons soy sauce
Ground pepper to taste
