Lobster, scallops and fish paella tonight. Was able to get the socarrat around the edge but not the center. The last picture is how I set up my coals. I like having the coals in the back that way I can move the pan around to control temperature.

    Did you start indirect then shift to direct? Seems pretty hot for an hour long direct cook.

    I did this a couple of times before and it is a fun cook. I didn’t bank my coals and had a great soccarrat. It is a festive feast. I typically do a sausage, chicken and shrimp, but am eager to do a seafood one. What kind of fish did you use?
