Overall really happy with how this came out! Any tips on getting a more even crumb and for getting a nice ear? I’m not sure if this is over or under proofed

I followed [this Reddit guide](https://www.reddit.com/r/Sourdough/comments/5kailv/sourdough_beginners_guide/) as my recipe. It was incredibly detailed and helpful. Used regular KA unbleached flour
