Made a protein bowl on a budget.

Ingredients:
– 8 Diced chicken breasts
– Shredded beef
– 1 Can of diced tomatoes
– 1 Diced red onion
– 2 Eggs
– Cheddar cheese sauce (No sugar)

    How’d you fit 8 chicken breasts in one bowl, especially with all the other ingredients?

    I would break this up and add more low carb veggies. Cook the chix and steak in big batch then separate into portions (freeze if you aren’t going to eat over 3 days). You can prep all the veggies while you’re cooking the meat.
    One version–delete tomatoes and add mushrooms sauteed in butter.
    2nd version–delete tomatoes and add roasted cauliflower (cut up cauliflower, shake in baggie with olive oil and lots of garlic powder, salt, pepper, then roast in pan until nicely browned).
    3rd version–delete tomatoes and onion and add sauteed celery, a roma tomato cut up, and diced avocado.

    Onion and canned tomato carbs will add up, so I’m always looking for ways to change out and also have different flavor profiles.

    But this does look good and do you deliver? Haha
