Japan is in vogue, and as of today, Asian cuisine in the Valencian Community has a new benchmark on the Alicante coast. According to the Macarfi Guide 2026, the Amas restaurant, located in the lobby of the AR Diamante Beach hotel in Calpe, is one of the best new openings of the year, led by chef Diego Laso.
Seasoned in Japanese kitchens and founder of the Momiji restaurant in Valencia, Laso has opted for a fusion between Asia and the Mediterranean that can be sampled from €35 with a set menu.
The name of the restaurant pays tribute to the legendary Japanese female divers, and its concept reinterprets the classic taverns of the country, known as izakayas, through a purely Mediterranean perspective.

The most economical option at the restaurant includes a Japanese tapa of your choice, twelve assorted pieces of sushi and sashimi to share, and a dessert.
For those looking for a more extensive meal, the Superficie (€50) and Profundidad (€65) alternatives offer a wider range of dishes. These options include premium dishes such as Scottish salmon tartare and bluefin tuna nigiri with ancestral soy sauce.
All fused with local products such as Calpe white prawns and sashimi made with fish from the day’s catch.

Amas’ cuisine is one of two openings highlighted by the Spanish guide for 2026 in the Valencian Community. The other is Plëgat, in Alicante, with a menu focused on the sea, offering a €60 tasting menu by Nanín Pérez.
