Meat purveyor fucked up and sent us 14oz prime New York’s. Team has been working hard so I made them steak! 2 hrs at 134F. Was amazing!

    If you haven’t tried it yet, I’d really recommend to sous vide the carrots as well. Check out the serious eats recipe.
