I'm addicted to these now. I made two last night, two tonight, and unashamedly one for breakfast earlier. The little burger is my dog tax, and yes, I accidentally used two top buns for the first one.

This recipe makes two Oklahoma fried onion burgers:

– Mandoline a medium sweet onion paper thin

– Roll 3oz balls of ground meat (pictured is venison)

– Heat tallow or bacon fat on medium-low. Go lower than you think

– Place meat in the heated pan

– Salt

– Drop half the onions on top of the meat

– Smash flat (I used the bottom of a saucepan)

– Cook a few minutes until the edges start to brown

– Tuck any stray onions back on top

– Flip

– Tuck onions again

– Add cheese if you want, then set the buns on top to steam

– Let the onions brown a couple more minutes

– Slide a spatula under and, holding the bottom bun in your other hand, pinch the burger off

So good.
