


Just got back from a trip to Italy and I’ve been trying to recreate the thin crust Scrocchiarella style that I had at a place called Ivo e Trastevere in Rome. What a fun place! They were cranking these pizzas out like a well oiled machine to locals and tourists. I noticed the toppings were all simple, local combinations. It's taken a few attempts to try and get it right.
