Pan seared salmon, air fryer potatoes, cucumbers with yogurt and lemon juice, plenty of dill all over

    Potatoes: Cut in half lengthwise, add to a bowl with approx 2 tlbs olive oil, salt and pepper to taste. Air fry for 15-20 minutes, shaking halfway through

    Salmon: from NYTimes Cooking – heat pan over medium high heat, pat down salmon and rub with olive oil, salt and pepper to taste. Place on hot pan and cook for 5 minutes, flip salmon and cook for another 4 minutes. rest before serving.

    Cucumbers – 2 persian cucumbers sliced, add approx. 3 oz of plain greek yogurt, juice of half one lemon, pinch of salt. Coat and set aside – good in the fridge for 3-4 days!

    That looks suuuper good. But also a friendly reminder that potatoes are more of a starch/sugar in the way they affect the body, so you’ll want to use them in slightly smaller portions than green and fibrous veg 🙂

    Aren’t vegetables supposed to make up the majority of the diet ?
    This is not the case here.
    You’ve added cucumber. It’s balanced but not Mediterranean.
