How did I do for my first ever Mediterranean diet meal? Doctor told me either diet now or die, so here I am.

    – Everything bagel seasoning
    – Blueberries
    – Hummus w/ garlic

    Not pictured: The “jammy” egg I made in my air fryer that turned out to be completely raw, and unsweetened peach fruit tea, cold brewed overnight.

    Was diagnosed with EoE and liver disease. Told I have to cut out dairy along with other diet and exercise changes.

    Never heard of Ezekiel bread before but it’s **amazing.**

    Also please critique and destroy this meal, I really want to do everything that I can to learn good habits so let me know, please!!

    That looks like a good start, but the LCARS plate really steals the show for me.

    I’ve been tossing castletrevano olives, red grapes and feta into some balsamic lately. One day I will not be lazy and whip the feta with Greek yogurt, add almonds and bake the whole thing.

    It counts but the only vegetable you have is the garlic. You’ve got 5 fruits: avocado, blueberries, tomatoes, lemon, and technically the cayenne pepper. Increase the vegetables, lesson the fruits.

    I should stay away from olives assuming they are brined and full of sodium in MY case.
    I made a recipe for my WW bread in my bread machine only ingredients are
    WW FLOUR, gluten powder, water. I’m happy as a clam no sugar or sodium or oil, pretty hardcore but comes out nice.

    Add ons I put in my bread are dried onions, poppy, sesame, pepper, chia
    Or whatever.

    I like how the seeds are on the outside of the bread you buy I need to roll mine in seeds at the right cycle time to do that for a bread machine.

    The diet is new to me but have to below carb 60 for each meal, 1500 sodium for the day. 1400-2000 calories for the day.

    For me it’s easy to follow this diet I pretty much gave up red mead and pork, kind of like you giving up dairy.

    This is great. And you have the right approach to keep it simple. One meal at a time. It can be overwhelming to start depending on your circumstances – for example I was not a big fish or salad eater. Now I love it. Good luck.

    This is a great start. I see you prioritized produce, the most important thing. I can’t really say much but if you want to improve it add a dash of greens to the toast, they provide different vitamins and it will still taste like guac.

    Hey! I have EOE as well. Do they have you only off dairy, or also on medication? The great thing about dairy-free MD is you’re not missing much, you get so much yummy fat from olive oil and nuts and there are so many recipes that don’t include dairy.

    I think your meal looks great. It’s how I started, thinking of components and putting them together. Half my meals are still in this format. Keeping it simple makes it possible. One meal at a time! a

    At first I was always hungry, here’s my tip: If you end up still hungry, next time add leaves: you can add spinach, arugula and leaf lettuce to just about any cold plate, or spinach to wilt into anything hot.

    This looks lovely! Did it feel like enough protein to make you feel not hungry for a bit? I’m pretty active so it’s something that I try to be careful about!

    Some toppings i like for my avocado toast: smoked salmon, scrambled eggs, chickpeas, tofu scramble, radishes, cucumbers, canned tuna, hemp hearts, cottage cheese.

    As you proceed, you might want to check out beans/lentils. Very easy to prepare – canned/frozen are fine when they are packed without salt. If you get in to it you might try the dried kinds.

    Very filling, freeze well even as a soup. High protein, high fiber, lo cal, and very cheap. Great when you don’t have time to set out a nice assortment like you show here.

    You might also enjoy some whole grains – brown rice and bulgar wheat are my favorites. Nearly effortless to prepare in a cheap rice cooker, also freeze well.
