Homemade candied salmon!
Dry brine salmon overnight in 2:1 brown sugar and coarse salt mix (-100g/50g), ensure well covered, overnight in fridge.
Next morning wash off excess with cold water, pat dry with paper towels, back in the fridge on a wire rack for a few hours to form pellicle (makes it sticky).
Mix up a glaze of 3:1 maple syrup / soy sauce (~45g/15)
Glaze lightly with a brush both sides, put in dehydrator and dry for about 8 hours, brush every hour until you run out of glaze (~3 times)
Absolutely delicious, apology for the lack of can.

That looks so good! If you have find you have too much, I’ll be happy to take it off your hands for you 🤣
I had this stuff from Whole Foods once like ten years ago and it was an out of this world experience to be honest, I’m going to have to make a trip.
