Homemade candied salmon!

Dry brine salmon overnight in 2:1 brown sugar and coarse salt mix (-100g/50g), ensure well covered, overnight in fridge.

Next morning wash off excess with cold water, pat dry with paper towels, back in the fridge on a wire rack for a few hours to form pellicle (makes it sticky).

Mix up a glaze of 3:1 maple syrup / soy sauce (~45g/15)

Glaze lightly with a brush both sides, put in dehydrator and dry for about 8 hours, brush every hour until you run out of glaze (~3 times)

Absolutely delicious, apology for the lack of can.
