Minestra: The Best Hearty Italian Soup (Beef, Pasta & Potatoes)

How does your family make Minestra? This hearty Italian soup is a classic! Loaded with ground beef, pasta, and potatoes, it’s the ultimate comfort meal. It’s a humble, easy dinner recipe that tastes like home and all comes together in one pot.

Ingredients:
1 lb ground beef
1/2 lb pasta
2 potatoes, cubed
1 carrot, diced
1 onion, diced
1 clove garlic
1/2 cup fresh peas
1/2 cup tomato purée
Fresh parsley, chopped
Olive oil
Salt & freshly ground black pepper
Vegetable broth or water (enough to cover)
Grated cheese

Directions:
1. Warm a generous drizzle of olive oil in a large pot. Add the onion, carrot and garlic. Sauté until the vegetables soften.
2. Add the ground beef and break it apart with a wooden spoon and cook for a few minutes.
3. Stir in the tomato purée and season with salt and black pepper.
4. Add the potatoes and pour in enough vegetable broth (or water) to fully cover everything. Bring to a gentle simmer, cover, and cook for 20 minutes.
5. After 20 minutes, check the liquid level and add more if needed. Add the pasta and the peas directly into the pot.
6. Cook for 8 to 10 minutes, stirring occasionally so nothing sticks.
7. Finish with fresh parsley and a light sprinkle of grated cheese.

  2. I never heard of tomato passata and I am certain my supermarket doesn't stock it in the aisle with tomato sauce,etc. What is it?
