These look fancy… but I made them the easy way.
I had a box of cake mix sitting in my pantry that needed to be used, so I dressed it up a little — and wow. These turned out so good. Soft chocolate cupcakes with a mini peanut butter cup baked right into the center, topped with fluffy peanut butter buttercream, mini chocolate chips, and another peanut butter cup on top.
They look bakery-worthy but are incredibly simple to make. No complicated steps. Just smart shortcuts.
And yes… they disappeared fast.
🧁 Cupcakes
You’ll Need:
• 1 box chocolate cake mix (plus ingredients listed on box)
• Mini peanut butter cups (1 per cupcake, plus extra for topping)
Instructions:
1. Prepare cake mix according to package directions.
2. Let the batter mix an extra minute or two to make it nice and airy.
3. Line a muffin pan with cupcake liners.
4. Use a 3 tbsp cookie scoop to portion batter into liners.
5. Press one mini peanut butter cup into the center of each cupcake.
6. Bake at 350°F for about 22 minutes, or until set.
7. Let cool completely before frosting.
🥜 Peanut Butter Buttercream
This amount is generous for frosting 18–24 cupcakes.
• 1 cup unsalted butter, softened
• 1 cup creamy peanut butter
• 2 ⅔ cups powdered sugar, sifted
• ⅓ cup heavy cream
• 1 tsp vanilla extract
• Pinch of salt
Instructions:
1. Beat butter until smooth and fluffy.
2. Add peanut butter and mix until combined.
3. Gradually add powdered sugar.
4. Add heavy cream, vanilla, and salt.
5. Beat until light, fluffy, and pipeable.
If it’s too thick, add a splash more cream. If too soft, add a little powdered sugar.
✨ To Finish
• Pipe peanut butter buttercream in swirls.
• Sprinkle mini chocolate chips on top.
• Cut remaining peanut butter cups in half and place one on each cupcake.
They truly look like they came from a bakery case — but they started with a box mix.

Those look great! I u always loved making cupcakes. I used to make something similar, but I have a recipe for pb filling, then I'd pipe it into the cupcakes from the bottom, then choc buttercream on top. Can't miss with pb & chocolate 😋

Where did you find that mixer?
I got this tip from Jennifer Garner when she was on The Tonight Show with Jimmy fallon. Take your cupcake pull it apart starting from the bottom halfway up and flip it over and make it like a sandwich. This way your frosting is like in the middle and you don't get frosting all over your face when you try to eat it. Since I saw that episode and her doing it that way I've been eating my cupcakes that way ever since! But with your Reese's cup in the middle it may make it a little too messy to do that! Try it with just a plain cupcake with nothing in the middle and then flip it upside down and make the frosting in the middle like a sandwich!
