The best ramen I’ve ever had have been the simple ones. When I lived in Japan in the 90s I don’t think ramen had yet been elevated to fancy status yet. Most of the places I went were restaurants near train stations where you were packed along a counter shoulder to shoulder with salarymen who were looking for a fast fix on their way to or from wherever. What you’ve got there may not be fancy, but it’s definitely pretty.
