Turkish Red Lentil Soup
So simple, cozy, and full of flavor 🤍
Ingredients:
1 tablespoon olive oil (15 ml)
1 medium onion, finely chopped (1 cup / 150 g)
3 cloves garlic, minced (10 g)
1 medium carrot, chopped (¾ cup / 100 g)
1 medium potato, chopped (1 cup / 150 g)
1 tablespoon tomato paste (20 g)
1 teaspoon cumin
1 teaspoon paprika
½–1 teaspoon chili powder (to taste)
1 cup red lentils, very well rinsed (200 g)
4 cups chicken broth or water (1 liter)
Salt & black pepper to taste
Instructions:
1. Heat olive oil in a pot over medium heat.
2. Add chopped onion and sauté until soft and translucent.
3. Stir in garlic, carrot, and potato. Cook for 2–3 minutes.
4. Add tomato paste and spices. Mix well and let everything toast for about a minute to deepen the flavor.
5. Pour in broth (or water) and bring to a boil.
6. Add rinsed red lentils. Reduce heat and simmer for about 15–20 minutes, until lentils and vegetables are very tender.
7. Blend until smooth and creamy. Adjust salt and pepper if needed.
Serve hot with dry mint on top and a squeeze of lemon if you like.
