This one is surprisingly delicious, given how cheap and simple it is to put together..

Recipe is here, from Olive Tomato. Mine is a very purple version as I used red cabbage and red onion! I did also go against the author's advice and used brown rice for it because it's what I have in right now. So for that I just removed the step of simmering the cabbage separately (step 4 in the recipe) and just gently-simmered everything together for the total time given in the recipe (around 45 minutes, after the initial sautéing of the onion and the wilting of the cabbage) I wasn't sure if the rice would be overcooked, but it was actually soft and creamy without being mushy.

Tonight I ate this with oven baked salmon (15-20 minutes at 180c or around 350ºf in a fan oven), but will be having the other half of it tomorrow with some feta and lentils. 🙂
