Is it possible to omit the wine in this recipe? I could simmer in water or more beef broth? Thanks so much!

A tbsp of vinegar is a good substitution for wine. It gives a little acidity in a similar way.
Edit: I didn’t realize this was for canning. Just gave cooking advice. I don’t know if it would be safe for canning.

Could use a vinegar instead. You still need the acid though or the flavours will be off. Especially for French onion soup.

You could use more beef broth, yes, and add a tablespoon of red wine vinegar for acid. But I would look for a different recipe. It doesn’t make sense to try and change this one.

French onion soup doesn’t really taste like French onion without the wine. They do make nonalcoholic wines these days that are quite good if you’re trying to abstain from alcohol.
