My first butt.
6.20 pound butt. 225 for 14 hrs, stalled at 170, rapped, 2hrs at 250 till 205. Rested 4 hrs, wrap with foil, wrapped with towel, into cooler.
Simple seasoning, kinder butcher blend, Stubbs black pepper rub, mustard binder. In fridge over night. Pull out of fridge a hour before smoke.
Put the butt on a Nordic pan with rack. Some water and apple juice in pan. And a small pan of water over hot spot. No spray with apple juice/cider mix.
Dang good meat.
