But as a straight up fry or just with ketchup I genuinely think they’re the worst in the game.
They’re really fresh, never frozen, but that’s part of the problem. Potatoes really need to be frozen or a lengthy multiple fry process to get them right. Most place just opt to freeze them because it’s easier to have lots on hand that way and it achieves the perfect texture anyways so there’s no downside.
In n out prides themselves on being fresh and for the veggies on the burger it’s incredible. One of the few places I reliably get fresh cold veggies on a hot burger. For the fries though it’s their downfall. They should really freeze them so they don’t taste like dry grainy twigs.

I’m a fan of INO, but I think their fries suck. They never seem salty enough, near flavorless. I always doctor mine up, and I always dine in because INO doesn’t tend to be very good once it starts cooling off.
My dad taught me this: I order my fries with chopped chillies, chopped raw onion, and three packs of spread on the side. Then I squeeze lemon juice on them and sprinkle some black pepper on, and add spread as I go so I don’t get dry spots. The lemon juice helps the pepper stick and does some nice things to the chopped chillie flavor.
People swear by animal fries, but I feel ridiculous paying $5 for _fries_ and they never seem to put enough spread on them. My way doesn’t cost any extra than regular fries.

It’s interesting that so many people don’t like them but they make them fresh on site. People prefer McDonalds chemical fries to actual fresh fried taters. They are definitely better if you get a fresh batch though, so it’s hit or miss. I’ll admit.

Nay! I LOVE In n Out burger an visit every time in SoCal, but I’ve stopped adding fries to my order long ago. They are just not for me. McDonald’s or even BK fries are much better.

Here’s how to get good fries at In-N-Out.
1) Order fries with no salt. Ask for an extra tray and tray liner. 2) Dump the fries on the tray and spread them out. Allow them to cool for half an hour. 3) Wash your hands. Place the fries back into the container. Bring the fries back to the counter. 4) Order your burger. Ask them to fry the fries a second time. Tell them they can salt them this time. (They won’t do this. But if they did, you’d now have decent fries.)
Fries need to be fried twice with a cool-down in between. The method I described won’t get you all the way to pomme frite nirvana. But it’s better than what they’re currently doing.
