This traditional Lebanese lentil rice is a simple, comforting dish made with rice, lentils, and caramelised onions. A family-style recipe that’s full of flavour and easy to make at home.

INGREDIENTS
Mixed spice (1/2 tsp)
Green lentils (1/2 cup)
Onion (1)
Basmati rice (2 cups)
Vegetable oil
Salt and pepper

METHOD
Rinse and cook the lentils in lightly salted water until just tender, then drain and set aside. Rinse the basmati rice until the water runs clear, cook in salted water until just done, drain, and allow it to steam-dry briefly. Finely slice or dice the onion and fry slowly in a generous amount of oil until deep golden and lightly crisp. Add the cooked lentils to the onions and stir, then gradually fold in the rice. Season with salt, black pepper, and a small pinch of mixed spice or cinnamon. For extra flavour, add a little more oil and let the rice sit undisturbed for 1–2 minutes to create a light crispy base, then stir once and remove from the heat. Serve warm with salad, yogurt or raita, and grilled vegetables or chicken.
