Utamami, a restaurant blending Italian comfort with Japanese precision, is getting ready to open in Hamilton at 65 King Street E.
The Hamilton location will showcase Utamami’s seasonal, thoughtfully composed dishes, combining home-style Italian flavors with Japanese technique, according to the company’s social media. Co-owner Max Riemschneider tells What Now that the team is in the final stages of wrapping up the menu, waiting on permits, and locking in our official opening timeline. While an exact opening date has not been confirmed, the restaurant has previewed items at local pop-ups and markets. Menu highlights will include the Formaggi Sando, tiramisù with Asian-inspired whipped tofu mascarpone, and cannoli with miso-caramel or black sesame fillings.
Utamami focuses on approachable, refined dishes rooted in seasonality and craftsmanship. Each plate is designed to balance technique with comfort, offering elevated versions of familiar Italian flavors. The Hamilton restaurant represents the brand’s first permanent space in the city and follows its initial pop-up and market appearances.
The restaurant’s space will provide a warm, inviting setting suitable for casual meals, dinners with friends, or special occasions. A curated beverage program will accompany the menu, emphasizing thoughtful pairings without being overly formal.
Signature offerings include the Formaggi Sando, layered with mascarpone butter, Parmesan, Pecorino, and Provolone, served with a shiso dip, and desserts such as tiramisù and cannoli with unique fillings. Specials and seasonal additions are also planned to rotate throughout the year.
Utamami’s opening in Hamilton expands access to Japanese-inspired Italian cuisine in the city. The restaurant emphasizes quality ingredients, thoughtful preparation, and a relaxed dining experience, offering meals that are both comforting and inventive.
