🍋 High-Protein Lemon Poppy Seed Muffins

Yield: 12 muffins
Protein: ~About 8g per muffin

Ingredients
• 3 cups all-purpose flour
• ¾ cup pure maple syrup
• 2 tablespoons poppy seeds
• 1 tablespoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• 1 cup plain Greek yogurt
• ½ cup cottage cheese, blended until completely smooth
• 2 tablespoons fresh lemon juice
• 1½ tablespoons lemon zest
• 1 ½ teaspoon lemon extract
• 2 large eggs
• ⅓ cup (5 tablespoons) unsalted butter, melted and cooled

Directions
1)Preheat oven to 375°F and line a 12-cup muffin pan with liners or grease well.
2)In a large bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt.
3)In another bowl, whisk the Greek yogurt, blended cottage cheese, maple syrup, lemon juice, lemon zest, lemon extract, eggs, and melted butter until smooth.
4)Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix — a few lumps are okay.
5)Divide the batter evenly into the muffin cups, filling about ¾ full.
6)Bake for 18–20 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.
7)Let cool for about 10 minutes
