I opened a canned jar of pickled beets and was going to serve them with something but I forgot and stored then in a Tupperware. It's been about a month, maybe more. There's no mold, they're firm and the juice they're in is clear, the color is vibrant. I tried a small chunk and it tastes like beets in vinegar. I'd hate to throw them out, but are they safe? They came from a professional canner.

    Did you keep them in the fridge, or just sitting on the countertop? Once you open the can, they’re not safe for long term unrefrigerated storage anymore, so I’d toss them if they were on the counter or in a cupboard.

    If you had them in the fridge, they’re probably safe to eat. Idk enough about pickled beets, but I keep pickled veg in the fridge for a long time myself.

    When I do a quick google, I see ranges of 1-3 months up to 6 months for pickled vegetables stored in fridge. Based on how long my pickles last in the fridge, that seems like a reasonable assumption.
