Visited the original "Shikoku-ya" in the Osaka Ekimae No.2 Building today. This place is legendary for its authentic vibe and perfectly chewy noodles.

I had the Udon with tempura and a soft-boiled egg. The broth (dashi) was so rich, and that egg… just look at it! As a cook, I'm always inspired by these long-standing shops that keep the tradition alive in such a humble setting.

If you want to experience real Japanese soul food away from the tourist traps, the basement floors of these old buildings in Umeda are a gold mine. 🇯🇵🥢

    That looks… absolutely astounding. Once I saw that egg, and those noodles, I was sold.

    There used to be a really good ramen shop underneath the #3 building but it closed sadly
