I know it doesn’t look very pretty, but I have been experimenting with a few different versions of volume mac and cheese and this one has been the best by far. the taste and texture were great, and the fiber and protein made it very filling.

INGREDIENTS:
– 60g Fiber Gourmet Light Rotini (118)
– 70g Palmini Angel Hair (18)
– 60g Riced Cauliflower (12)
– 70g Ground Chicken Breast (75)
– 10g Fat Free Shredded Cheddar Cheese (16)
– 1 Velveeta Cheese Slice (35)
– 3g of Sour Cream (6)
– Mrs. Taste Cheddar Sauce (0)

INSTRUCTIONS
1. Add the Fiber Gourmet to a pot of boiling water. Cook for ~15 minutes, or until tender. I have found that high fiber pasta tends to take a bit longer than normal pasta to soften, so it might need more time than the box says.
2. While the pasta is boiling, cook the chicken breast in a separate pan. When the meat is cooked, add the Palmini and Riced Cauliflower to the pan. This will defrost the cauliflower and helps to soften the Palmini noodles.
3. Drain the Fiber Gourmet, and add the cooked Chicken, Cauliflower Rice, and Palmini to the pot. Stir in the Sour Cream, Shredded Cheese, and the Velveeta Slice. Add the Cheddar Sauce to taste, remove from heat, and enjoy!
