Leftover mashup bakes are my favorite lazy dinner – I do something similar with old rice beans veggies and a can of coconut milk baked till crispy on top. Yours looks tasty even if it’s “nasty” in a good way. What was in the mix this time.

I love leftover mash up recipes that look awful but taste great. My curries usually involve a ton of random vegetables and it ends up looking like slop but it tastes so good.
