Comfort in every spoonful 🥄

Tuscan Bean Soup:

Ingredients
• 1 bag Salt Sisters Tuscan Bean Soup Blend
• 1 Tbsp extra virgin olive oil
• ½ lb Italian sausage, sliced (optional)
• 1 medium onion, diced
• 1 small green bell pepper, diced
• 1 red bell pepper, diced
• 2 large garlic cloves, minced
• 1 (14 oz) can diced tomatoes
• 1 (6 oz) can tomato paste
• 1 Salt Sisters Tuscan Farmhouse Seasoning packet (included in bag)
• 4 c. vegetable or chicken stock
• 2 c. kale or Swiss chard, chopped
• Parmesan cheese, for serving

Directions
1. Remove the seasoning packet and place beans in a large bowl. Cover with water and soak for 6–8 hours or overnight. Drain and discard the soaking water.
2. In a large soup pot, heat olive oil over medium-high heat. Add onion, peppers, and garlic, and cook until softened. If using sausage, add it with the onions and cook until lightly browned.
3. Stir in the beans, diced tomatoes, tomato paste, Tuscan Farmhouse seasoning packet, and stock. Bring to a boil, skimming any foam from the top.
4. Reduce heat, cover, and simmer for 1–2 hours, stirring occasionally, until the beans are tender.
5. Add chopped kale or Swiss chard and simmer for another 15–20 minutes. If using a ham hock, remove it, shred the meat, and return it to the pot.
6. Serve warm, garnished with freshly grated Parmesan cheese
